White truffle: Alba truffle (Tuber magnatum)

White Alba truffle is a seasonal truffle and is usually available from November to January. You can order the first class tubers from 50 g in our delicatessen online shop.

The king among the truffles is Tuber magnatum, the white spice mushroom with an intense smell and a smooth surface. It is next to Tuber melanosporum (Perigord truffle), the most popular truffle variety. The exterior of the Alba truffle is white to ocher-yellowish, the inside whitish to flesh-red, with bright white veining. The truffles can grow to 3 – 8 cm, some even bigger. Alba truffles are available in our online shop from October to January to enrich your banquet with something very special.

PLEASE NOTICE: As truffles are seasonal products, their availability can change at short notice, depending for example on the weather conditions in the collection areas. We will therefore process and dispatch your order immediately upon placement.
Unfortunately, we are not able to fulfil special requests for truffles to be delivered at a later date.

 

The taste of Albatrüffel

In terms of taste, Alba truffles are compared with onions, garlic, cheese or wild garlic. With their unmistakable, strong aroma and earthy scent, Italian cuisine likes to use these truffles with extravagant pasta and rice dishes to refine luxurious food. In the peak months, top truffles can be traded up to 8,000 € per kilo.

In order to be able to offer you only the best possible quality, we only sell whole tubers. For this reason, the sales weight varies slightly with this natural product.

We recommend 5 g per person for a starter and 15 g truffle per person for a main course. When heated, the truffles lose their taste. That’s why truffles are eaten raw, planed or grated over food.

Fresh Albatrüffel with firm consistency should be consumed as quickly as possible to experience the bewitching sensual smell on the palate as best as possible – a true pleasure for the senses. A cold storage in the refrigerator is possible for a short time.

The „exclusive“ mushrooms are mainly harvested in Italy from October to the end of December.

We also recommend our truffle oil, with 18 different flavor components, for the exclusive taste experience for your banquet table and very special occasions.

For truffles, nutritional values ​​are not required.

 

Store Alba truffle properly

Please store your Alba truffle well closed in a refrigerator at 4 °C. The truffles are then durable for up to 7-10 days.
